Coco-Caramel Beauty Truffles

Who doesn’t love a sweet treat for dessert, as a snack or post-workout pick-me up? Most store-bought sweets are loaded with white sugar at best, high-fructose corn-syrup or other unpronounceable chemicals at worst, which all take a toll on our health and congest our skin. These beauty truffles will satisfy your sweet cravings without giving you any sugar-crash thanks to the good fats in it, that will keep you blood sugar stable and your skin glowing (within a diet richer in fresh fruits and vegetables than processed food).

What you’ll need:
1/2  cup shredded coconut
2     tablespoons of coconut oil
1      tablespoon of coconut sugar
1/4  cup crunchy almond butter
3     medjool dates, pitted
1/2  teaspoon pure vanilla extract
1/2  teaspoon ground cinnamon
1      pinch of sea salt
1      tablespoon of lucuma (optional but strongly recommended as it gives a lovely caramel hint)
 + Extra shredded coconut or lucuma or a mix of both for coating
 
A few easy steps:
  1. Throw everything (except coconut and lucuma for coating) in a food processor and mix until doughy consistency is reached.
  2. Place in freezer for 5/10 minutes so the dough is easier to handle.
  3. Spoon out half-a-table-spoon at a time, roll between (clean) hands and set on a plate.
  4. Fill a small bowl to the 1/3 with shredded coconut and/or lucuma, and toss the truffles around, one at a time, until fully covered.
  5. Store in the fridge up to 2 weeks. These will get soft (and delicious) at room temperature.
Ingredient Highlight
 
Coconut               Promotes youthfulness. Rich in unique fatty acids (lauric acid), coconut is known improve skin and hair health as a natural antiseptic, anti-microbial and moisturizer. Rich in iron, potassium (facilitate cellular cleansing), magnesium and calcium. Coconut sugar is naturally low glycemic and rich in vitamins, minerals and amino acids.
 
Almonds              Very rich in vitamin E, protect skin against damages caused by ultraviolet while nourishing it from elements that can cause dryness. Rich in minerals (zinc, calcium, iron, potassium, manganese, selenium, copper and folate) and monounsaturated fat the helps soften the skin.  
 
Dates                    Great source of dietary fiber. Highest concentration of polyphenols (antioxidants) among all dried fruits that gives it anti-infective and anti-inflammatory properties. Best natural sources of potassium (needed to maintain a healthy nervous system and to balance the body’s metabolism), as well as iron, calcium, manganese and copper.
 
Cinnamon           Helps to balance blood sugar, enhances circulation, eases digestion and offers anti-parasitic, antifungal, antiseptic and antibacterial properties supposed to help acne-prone skin.
